Jersey Fresh Rustic pasta with Sausage, Peppers, and Plum tomatoes


2 links Cartlidge Meats Housemade Italian Sausage (removed from casing)
3 Pineland farms bell peppers seeded and roughly chopped
1 Pineland Farms Scallion sliced 1 Jersey Fresh onion
6 Pineland Farms Plum Tomatoes (quartered)
1/4 c extra virgin olive oil
3-4 cloves garlic finely chopped
Pineland Farms Basil for garnish



Take prepared veggies (holding garlic) and coat with 1/2 of the oil, salt and pepper. Roast at 350 for 30 minutes or until soft and slightly browned. Allow to cool. Remove sausage from it's casing. Brown over medium heat with the remaining oil and garlic. When sausage is cooked through, add roasted veggies and your favorite cooked pasta and heat. Great with a sprinkle of Parmesan and a nice glass of wine!
