Jersey Fresh Mexican Summer Harvest Salad


4 ears Jersey Fresh White or Bi-color corn peeled and off the cob
2 Jersey Fresh Sweet fryer peppers finely chopped
1 Jersey Fresh Jalepeno seeded and finely chopped (optional)
1 small bunch Jersey Fresh cilantro finely chopped
1 pint Jersey Fresh Cherry or Grape tomatoes quartered
1 Jersey Fresh onion finely chopped
2 cans black beans rinsed and drained
1 bag mexican blend shredded cheese (optional)
1/4 cup extra virgin olive oil
2 tablespoons ground cumin
1?2 cup of lime juice
Salt and pepper to taste



Fry the chopped onion in the olive oil and cumin until tender and translucent. Allow to cool a bit. Mix corn, peppers, tomato, cilantro, beans in a large bowl. Add onion, oil and cumin mixture. Combine well with the lime juice. Mix in cheese and season with salt and pepper if desired. This recipe keeps well for up to 5 days in the fridge. Top with grilled chicken or shrimp for a hearty and healthy meal!
