Pineland and Sandy Acres Farms Butternut Apple and Ginger Soup


1 tablespoon olive oil
1 small Jersey Fresh onion
2.5 teaspoons chopped ginger
1 Jersey Fresh butternut squash, diced
2 large Jersey Fresh apples, diced
3 teaspoons curry powder
1/2 teaspoon smoked paprika
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1.5-2 cups water
1.5 tablespoon brown sugar
1 teaspoon salt, or to taste teaspoon black pepper, or to taste



1. Press saute button on the Pressure Cooker. Once the pot is hot, add oil to the inner pot.
2. Add chopped onion and ginger. Cook for 2-3 minutes till onions are soft.
3. Add butternut squash and apples and stir to combine.
4. Add all the spices - curry powder, smoked paprika, around cinnamon, and ground cardamom and mix to combine.
5. Then add water,brown sugar, salt and black pepper and mix to combine.
6. Close the lid of the IP. Press the cancel button and then press the manual/pressure cook button. Cook on high pressure for 8 minutes. Do 5 minutes Natural Pressure Release (NPR) and then do a quick release.
7. Blend the soup using an immersion blender. If you don't have an immersion blender, you can use your regular blender - just make sure that the soup cools first! This can be easily converted to make on your stovetop. Simply sautee the onion, ginger until soft. Add spices. Add squash and apple. Increase water to 4-5 cups. Cook covered for lhr or until squash is tender. Blend and enjoy!
