Jersey Fresh Sweet and Savory Skillet Hash


3/41b Cartlidge's Meats loose turkey breakfast sausage
4 assorted Pineland Farms sweetpotatoes/yams peeled and diced
1 small bunch Pineland Farms kale chopped
2 Pineland Farms bell peppers diced
1 large Jersey Fresh onion diced
1 Pineland Farms Jalepeno or Long Hot diced
1 1/2 teaspoon garlic powder 1 1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1 teaspoon kosher salt (or 1/2 teaspoon table salt)
2 tablespoons extra virgin olive oil plus one teaspoon Pepper to taste



Season diced potatoes with spices, salt and oil. Toss to combine. Roast in a single layer at 400 for 20 minutes until soft inside and browned outside. While potatoes are roasting: Saute diced peppers (bell and optional hot) with onion in 1 teaspoon olive oil when peppers are soft and onion is translucent, add turkey sausage cook over medium heat until cooked through. Add chopped kale to wilt. When potatoes are finished over roasting, add to pan and stir to combine. Enjoy! This dish is wonderful alone or topped with a fried egg.
