Pineland Farms Simple Baba Ganoush


1 Pineland Farms Whole Eggplant
1/2 bunch Pineland Farms Parsley
1 tablespoon Extra Virgin Olive Oil
1 tablespoon Tahini
1-2 Tablespoons Lemon Juice
1/2 Clove garlic finely grated
Salt and Pepper to taste



Prepare the Eggplant by placing whole in a dry pan over high heat. Cook eggplant like this for 3-5 minutes per side to blacken skin and soften eggplant. When eggplant is blackened on all 4 sides, remove from pan. Check to see if Eggplant is soft. If there is still firmness to your eggplant. Stab with a fork and microwave for 5 minutes in a shallow bowl to collect the liquid. Allow eggplant to cool to handle, cut lengthwise and scoop flesh and seeds into a food processor. Add additional ingredients. Pulse until smooth. Serve warm or cold with pita or pita chips.
