Chef Post's Vibrant Veggie Salad


1/2 lb russet potatoes
1/2 lb purple sweet potatoes
1/2 lb red sweet potatoes
1 large red onion
1/2 head cabbage
1 pattypan squash
1/2 lb beets
1 cup maple syrup
1/2 cup water
3 1/2 Tbsp kosher salt
1 1/2 Tbsp chili powder
2 Tbsp garlic powder Tbsp thyme



Thinly slice all vegetables, toss all, except onion, beets, and cabbage, In a saute pan with just enough water to steam them tender. Fold Julienned cabbage and onion Into hot wiggles, allowing the residual heat to tenderize the onion and cabbage. Toss thinly sliced beet in a dry pan with chili powder and salt. Combine with other veggies. Combine maple syrup. thyme. garlic powder, & water in pan until smooth. Pour dressing over veggie blend and enjoy.
