Chef Post's Winter Warmer Slaw


1 1/2 lbs fresh collard greens
1 lb fresh turnip greens
1 lb fresh turnip
1 lb dry sweet apples
1 bulb fennel
1 sweet onion
3 cloves of garlic
1 acorn squash
1 buttercup squash
1 tsp all spice
2 tsp cinnamon
3 Tbsp chili powder
2 Tbsp cayenne
3 Tbsp kosher salt
2 Tbsp brown sugar
2 cups apple cider vinegar
2 cups water
1 1/2 cup mayonnaise



Combine water, vinegar; allspice, cinnamon, 1/2 of the cayenne, 1/2 the chili powder in a pot. Bring to a gentle boil. Thinly slice the turnip greens and collard greens, then add to liquid. Mandolin or julienne the apples, turnips, squash, fennel, and onion. Add to pickling mixture. Simmer until the greens and squash are tender. Let cool, slightly. Then fold in mayonnaise with sugar, chili, and cayenne. Salt and pepper to taste and enjoy.
