Chef Post's Pickled Pumpkin & Poblano Pepper Salsa


1 small pumpkin
3 poblano peppers
4 cloves of garlic
1 red onion
3 heirloom tomatoes
1 can of black beans
2 ears of corn
1 bunch of cilantro
1 cup of apple cider vinegar
1 cup of water Tbsp chili powder
1 1/2 tsp cayenne pepper
2 lines Salt & pepper



Peel, hollow out, and mince pumpkin
Combine pumpkin with minced poblano peppers and minced garlic
Put pumpkin mix in a sauce pan with vinegar, water, chili, cayenne, and 3 Tbsp of salt
Bring to a boil, cooking until pumpkin is tender and pickling liquid is mostly evaporated.
Combine pickled pumpkin mix with corn (off the cob), beans, cilantro (minced), diced onion
Finish with zest and juice of two limes.
Salt and pepper to taste and enjoy.
