Chef Post's Jersey Fresh Ratatouille


2 eggplant (large diced)
2 green squash ( large diced)
2 yellow squash (large diced)
2 zucchini (large diced)
2 yellow onions (large diced)
4 tomatoes (deseeded and diced)
2 green bell peppers (large diced)
1 jalapeno pepper (deseeded, deribbed, and minced)
1 clove garlic (minced)
1 1/2 Tbsp fresh thyme (finely chopped)
3 1/2 Tbsp fresh basil (tom)
2 Tbsp Olive oil
2 tsp crushed red pepper (optional)
Salt and pepper to taste



Sauté onions in olive oil
Once the onions haw softened and are fragrant, add the eggplant, squash, zucchini, and peppers
When the squash, zucchini, and peppers are tender, add garlic, herbs, crushed red peppers and tomatoes
Once the herbs are aromatic, season with salt and pepper to taste, and enjoy.
