Grilled Chicken Cutlets Topped w/ Pesto & Bruschetta (Dennis Malloy)

Ingredients / Bruschetta

(refer to Tomatoes with Pesto (Dennis Malloy) for instructions for Pesto)

3 large tomatoes, chopped
medium red onion, diced
2 cloves garlic, minced
cup fresh basil, chopped
cup fresh Italian parsley, chopped
Pinch of salt
Pinch of pepper
4 Tbsp olive oil


Directions / Chicken

Marinate thinly sliced chicken cutlets in lite Italian dressing for 30 minutes.
Grill chicken and top with pesto & bruschetta for a fresh summer alternative to chicken parm.

Directions / Southwestern Corn on the Cobs

  1. Par boil corn.
  2. Place on hot grill, just long enough to make grill marks.
  3. Roll ear of corn in melted butter.
  4. Top w/ blackening seasoning & sprinkle w/ parmesan cheese.
  5. Slice into 2 pieces for a great summer appetizer.
