Chef Post`s Stone Fruit Salsa


4 ripe apricots (diced)
4 ripe plums (diced)
1 white onion (diced)
3/4 Tbsp olive oil
2 Tbsp fresh cilantro (chopped)
1/2 pint grape tomatoes (quartered)
3/4 Tbsp dried chipotle pepper (ground)
2 cloves fresh garlic (minced)
1 Tbsp honey
3/4 tsp balsamic vinegar
1 lemon (juiced)
Salt and pepper (to taste)



Sauté the onion in olive oil over medium heat
Once softened and fragrant, add apricots and plums
As apricots and plums soften, add garlic and chipotle
Stir until chipotle becomes fragrant and fruit releases juice
Add honey, balsamic and lemon juice and mix well
Toss with tomatoes and cilantro
Add salt and pepper to taste & enjoy.
